加勒比地区岭南饮食的传承传播与在地化研究

摘要:加勒比的大量华工来自岭南地区,使得岭南饮食在加勒比中餐中占据主导地位。在加勒比“将就”饮食哲学的影响下,岭南饮食逐步扎根、传承并主动适应当地资源等客观条件,融合加勒比本土风味,形成了一种独特的、值得深入考究的加勒比岭南饮食美学。本文以岭南饮食为切入点,动态关联中加两地,通过参与式观察与半结构化访谈,探究加勒比岭南饮食的传播情况与在地化机制。经过近两个月的沉浸式调研,本文认为,近年来,依托家庭传承与数字化手段的辅助,加勒比岭南饮食历经了从“复制再现”到“创新”再到“标准化”的发展路径。加勒比岭南饮食的传播趋势呈现出由内部走向外部、跨族群、渐趋日常化与景观化的特征。此外,岭南饮食在地化的过程中,不仅与本土饮食习俗、社会结构相结合,还潜移默化地影响并参与塑造了加勒比本土的饮食文化。

Title: The Inheritance, Dissemination, and Localization of Lingnan Gastronomy in the Caribbean

Abstract: A large number of Chinese laborers in the Caribbean originated from the Lingnan region, making Lingnan cuisine a significant component of Chinese Caribbean cuisine. Influenced by the Caribbean philosophy of “making do” in food, Lingnan cuisine has gradually taken root, inherited, and adapted to local resources and conditions, creating a unique “Caribbean Lingnan culinary landscape” by integrating Caribbean local flavors. This paper uses Lingnan cuisine as an entry point to explore the dynamic connection between China and Caribbean. Through participatory observation and semi-structured interviews, it examines the dissemination and localization of Caribbean Lingnan gastronomy. After nearly two months of immersive research, this paper concludes that, in recent years, Caribbean Lingnan gastronomy has evolved from “replication” to “innovation” and “standardization” with the aid of family inheritance and internet. The dissemination trend of Caribbean Lingnan gastronomy is characterized by movement from internal to external, cross-ethnic exchange, more commonplace, and more landscape-oriented. Furthermore, during its localization, Lingnan gastronomy not only merges with local food customs and social structures but also subtly influences and shapes Caribbean local culinary culture.
